I've only made this zucchini recipe once, but I still think about it! http://orangette.net/2013/09/over-and-over-and-over/

Zucchini soup is the first solid food my daughter ever ate, so I have a real soft spot for it-- although we make a very simple version that's just zucchini sauteed with onions and garlic , and pureed with chicken broth.

Oh! And we often make "Superhero muffins" as an easy breakfast or snack: https://www.mealgarden.com/recipe/superhero-muffins/

I love that everything about this post is really just a conversation. An invitation to participate and share. πŸ’•

My favorite use for zucchini is just lightly sauteed with scrambled eggs. I'm always just so thrilled with it - I love it so many other ways, too! But my first go-to is definitely for breakfast.

What's your fave zuc recipe? I'm not really a fan, except, perhaps, when it's in ratatouille. . . .

Not a recipe, but when I was a kid, my baby sister was once allowed one of the giant zucchini’s as her β€œzucchini baby,” and she lovingly carried it around wrapped in a blankie for many weeks... much longer than anyone expected either the squash or her attention span to last!

I meant to comment on Instagram but then the doorbell rang!

My family has been making this soup with our glut for years because it freezes really really well: https://www.rachelphipps.com/2018/07/student-suppers-easy-summertime.html

If you put grated Halloumi in the fritters they melt in your mouth: https://www.rachelphipps.com/2021/08/courgette-halloumi-zucchini-fritters.html

And this stir fry is my new favourite way to eat zucchini this summer: https://www.rachelphipps.com/2022/05/chilli-garlic-courgette-zucchini-stir-fry.html

Also, do you have marrow in the US? Because I know here we grow specific varieties that taste great allowed to grow that big, and they’re essentially the same thing, but that looks like a marrow not a zucchini!
